Introduction.
 

Meat fondue is a delightful option for sharing during a gathering or special dinner. In this recipe, I'll show you how to prepare a meat fondue featuring Kobe beef, renowned for its exceptional flavor and tenderness. To enhance the experience, we'll accompany the fondue with a selection of sauces that will elevate the meat's flavors. Our sauce lineup includes mustard sauce, wasabi sauce, and soy sauce. Dipping the meat into these sauces ensures each bite is full of flavor explosions.

Ingredients:

​

  • 500 grams of Kobe beef, cut into pieces (suitable cuts include tenderloin or ribeye)

  • 1 liter of beef broth (homemade or pre-made)

  • 1 onion.

  • 2 carrots.

  • 2 celery stalks.

  • 2 leeks.

  • Vegetable oil for frying.

  • Salt and pepper to taste.

     

Assorted Sauces.


Mustard Sauce.
 

  • 1 cup of mayonnaise.

  • 2 tablespoons of mustard.

  • 3 tablespoons of cream.
     

Wasabi Sauce.
 

  • 2 tablespoons of wasabi paste.

  • 1/4 cup of mayonnaise.

  • 2 teaspoons of soy sauce.
     

Soy Sauce.
 

  • 1/4 cup of soy sauce.

  • 1 tablespoon of sugar.

  • 1 tablespoon of rice vinegar.

  • 1 teaspoon of sesame oil.
     


Preparation.

Preparing the Broth.
 

  1. Wash and chop the celery. Peel and chop the carrots and onion. Halve the leeks lengthwise and wash to remove any dirt.
     

  2. In a large pot, add the chopped vegetables and beef broth. Bring to a boil, then simmer on low heat for at least 30 minutes to infuse the flavors into the broth. Strain the broth and set aside.


 

Preparing the Sauces.
 

  1. For the mustard sauce, mix mayonnaise, mustard, and cream in a bowl until smooth and homogeneous. Keep refrigerated.
     

  2. For the wasabi sauce, blend wasabi paste, mayonnaise, and soy sauce in a small bowl until well combined. Keep refrigerated.
     

  3. For the soy sauce, combine soy sauce, sugar, rice vinegar, and sesame oil in a bowl until the sugar dissolves completely. Keep refrigerated.


 

Preparing the Fondue.
 

  1. Cut the Kobe beef into approximately 2-3 cm pieces for easy handling and even cooking.
     

  2. Heat the beef broth in a fondue pot over medium-high heat. Ensure the broth is hot but not boiling.
     

  3. Arrange the Kobe beef pieces on a platter, ready to be dipped into the hot broth.
